These decadent super moist brownies will knock your chocolate socks off! My husband and I have perfected this recipe  over many years. It’s his favorite chairlift snack between runs. They a sure to satisfy any chocolate craving!

Ingredients

  • 1 Cup Almond Flour
  • ½ Cup Dark Cocoa
  • ¾ Cup Chocolate Whey Or your fav Chocolate Protein Powder
  • 1 ¼ Cup Stevia Or your fav Sweetener
  • 1 Tsp Baking Soda
  • ½ Tsp Ground Coffee Bumps up the Chocolate Flavor!
  • ½ Tsp Ground Cinnamon Another Chocolate Bumper!
  • ½ Cup Melted Butter
  • ½ Cup Vegetable Oil Or Canola or Avocado Oil
  • 1 Cup Unsweetened Almond Milk
  • 3 Large Eggs Whisk
  • ¼ Cup No-Sugar Chocolate Chips I Like Lilly's Brand
  • ¼ Cup Chopped Walnuts Option to add your choice of nuts or none

Instructions

  • Gather all your ingredients and tools for the trade to save you time. Set oven to 350F.
  • In a medium bowl whisk dry ingredients (first 7) until smooth.
  • Make a well in the middle of the mixture. Stir in butter, oil, milk, eggs, and chocolate chips.
  • Pour into a baking pan using a rubber spatula...no carb left behind!
  • Option to top batter with your favorite nut.
  • Bake around 25 minutes and check for doneness by inserting a toothpick in the center. If it comes out dry, they are done!
  • Let cool completely before slicing. If you can wait...
  • Enjoy with coffee, tea and a friend!

Spinach and Sausage Quiche

This is a family fav that always satisfies a hungry crowd in the morning or afternoon. The delicious filling can easily be changed to your favorite ingredients. Enjoy warm straight from your oven or make ahead of time to serve at room temperature. The aroma in your kitchen will trigger any appetite.

Ingredients

  • 1 Lowcarbvana's Best All-Purpose Pie Crust or Buy 1 Pre-Made Pie Crust or Opt for No Crust Check out this recipe! Quick, yummy, super easy! Can make ahead and freeze.
  • Cooking Spray or Butter
  • 3 Tbsp Extra Virgin Olive Oil (EVOO)
  • 1 LBS Sweet Italian Turkey Sausage Ground or Links (casings removed)
  • ½ Bell Pepper Green, Red, or Yellow, Diced
  • ½ Onion Yellow or White, Diced
  • 8 Large Eggs
  • 2 Tsp Dijon Mustard
  • ½ Cup Half & Half Or your milk of choice.
  • 1 Tsp Fresh or Dried Dill
  • 1 Tsp Each of salt and pepper
  • ¼ Cup Roasted red pepper Chopped
  • ½ Cup Chopped Frozen or Fresh Spinach Thaw and strain frozen spinach.
  • 1 Cup Swiss or Gruyere Cheese A more intense cheesy flavor if you freshly grate it yourself, but pre shredded cheese is delicious too and saves prep time.
  • ½ Cup Cheddar Cheese Grated or shredded.
  • 1 Tbsp Fresh Parsley

Instructions

  • Preheat oven 350 degrees Fahrenheit.
  • Gather all your equipment and ingredients to save you lots of time!
  • Coat sides and bottom of pie plate with cooking spray or butter.
  • Pick your pie crust option.
  • Dice pepper and onion.
  • In skillet, brown sausage in 2 Tbsp of EVOO on medium-high heat. Break up meat into small pieces in skillet and transfer to a medium bowl.
  • Loosen sausage pan drippings with a spatula and add 1 Tbsp of EVOO. On medium-high heat, add pepper and onion. Season with salt and pepper to taste and saute until soft.
  • In a large bowl, whisk eggs, mustard, Half & Half (or milk), and dill.
  • Stir in sausage, pepper, onion, sun dried tomatoes, and Swiss cheese.
  • Pour into prepared pie crust.
  • Sprinkle Cheddar cheese on top.
  • Place quiche on cookie sheet and bake for 35-40 minutes, until cheese is golden on top.
  • Cover with aluminum foil and continue baking for 10-15 minutes, until the crust is golden.
  • Cool before slicing. Garnish with parsley and serve with cherry tomatoes, and/or avocado slices.

Best All Purpose Pie Crust

This low-carb pie crust will inspire you to make lots of savory or sweet pies. I love how quick and easy this comes together! Bonus: you can make it ahead of time and freeze.

All Purpose Pie Crust

  • Food processor Or medium bowl and wooden spoon
  • Measuring spoons and cups
  • Pie Plate I prefer glass; it heats up gently/evenly and you can see through it for doneness. Coat with cooking spray or butter

Ingredients

  • 1 Cup Carbolose Flour Available online. Or substitute with white flour which will increase to 15 carbs per slice. I prefer Flourish All Purpose Flour. It has less carbs and 5X the fiber than regular white flour which helps to slow the absorption of glucose.
  • ½ Cup Almond Flour
  • ½ Cup Cold Butter Cut into cubes
  • 2 Cold Eggs
  • 3 Tbsp Ice Water

Instructions

  • Set oven temperature according to your pie instructions.
  • Gather all ingredients and tools to save you time!
  • Add butter, flour, almond flour, and eggs into food processor.
  • While processor is on, pour in 1 tbsp of cold water at a time from the top until a dough ball is formed. Be patient, it will form! If using a bowl, mix well with a spoon or pastry cutter and form into a ball. You can freeze the dough ball in a ziplock bag if making ahead.
  • With your hands and the back of a measuring cup, gently press the dough into the bottom and sides of the pie plate. Use the back of a fork to crimp edges.
  • Fill with your favorite pie or quiche filling. Option to bake just the crust with no filling at 350F for 20-25 minutes for a cold pie filling.
  • Follow your usual baking time for pie filling. Check the crust for doneness 10-15 minutes beforehand. If the crust is golden, cover with foil until pie filling is done.
  • Let cool before slicing. Here is a piecrust for quiche, so good!

  • 2 Small bowls To separate egg yolks from egg whites

Ingredients

  • 4 Tbsp Psyllium Husk Powder
  • 1 ¼ Cup Almond Flour
  • 3 Tsp Baking Powder
  • 1 Tsp Salt
  • 1 Cup Boiled Water
  • 2 Tsp Apple Cider Vinegar Or White Vinegar
  • 3 Egg Whites Whisk
  • 2 Tsp Everything Bagel Seasoning Optional
  • 2 Tbsp Extra Virgin Olive Oil EVOO
  • 2 Minced Garlic Cloves Optional

Instructions

  • Gather all "tools for the trade" all ingredients and equipment to save you time!
  • Pulse dry ingredients in food processor.
  • Add boiled water, vinegar, and egg whites and mix together in food processor. Don't over-mix dough.
  • Wait 1-2 minutes for dough to begin to firm up. Scoop out 12 rolls with an ice scream scoop to a lined cookie sheet. Use a spatula to get all the dough out... no carb left behind!
  • The rolls will rise slightly in the oven in the shape you form. The deeper the scoop is, the higher the rolls. The wider the scoop is, the flatter the rolls, which can be used for sliders (small hamburgers).
  • Brush rolls with EVOO and sprinkle with Everything Bagel Seasoning or sesame seeds.
  • Bake 50 minutes until golden on top. A hollow sound is heard when tapping the bun gently with a spoon. Let cool and enjoy with butter. Many options below:
  • Option to make small hamburger buns for sliders using a wide scoop. Yum!
  • Option to make one large flat bread. Form a large oval with dough on cookie sheet. Top with EVOO, roasted garlic, and Italian seasonings. Slice. Yum!
  • Option to use as a base for Eggs Benedict! Use a wide scoop. Another Yum!
  • However you decide to shape it, enjoy all these bread possibilities!

Pumpkin Bread with Cinnamon Cream Cheese Frosting

Ingredients

  • 2 Cups Almond flour I use super fine flour or pulse for 10 seconds in food processor
  • 1 Tbsp Baking powder I know it seems like a lot, but it works well!
  • 1 Tsp Baking soda
  • 2 Tsp Cinnamon divided
  • ½ Tsp Ground nutmeg
  • ½ Tsp Ground cloves
  • 1 Tsp Salt
  • ¼ Cup Brown sugar Sweetener of Choice I use Swerve, plus 1 tsp for topping
  • 2 Tsp Liquid Sweetener of Choice I use Liquid Vanilla Stevia
  • 1 Tsp Pure vanilla
  • 2 Large Eggs
  • 1 Cup Canned pureed pumpkin
  • 1 Tsp Pumpkin seeds for topping

Cream Cheese Frosting

  • 8 Ounce Softened cream cheese
  • ¼ Cup Powdered sweetener of choice I use Swerve
  • 1 Tsp Pumpkin seeds I use slightly salted organic
  • 1 Tsp Pure vanilla

Instructions

  • Gather all "tools for the trade" to save time. Set oven to 325F.
  • Line bread pan with parchment paper by overlapping the sides for easy removal of the bread. Use Cooking Spray or butter on top and under the paper as you fit it to the bottom of the pan.
  • Mix all dry ingredients in food processor.
  • Add liquid sweetener, vanilla, eggs and pumpkin.
  • Mix until you have a creamy consistency.
  • Pour mixture into the bread pan. Bake in the center of the oven for one hour. Check for doneness by inserting a toothpick in the center that should come out dry.
  • Let cool completely in pan before frosting.

Cream Cheese Frosting

  • In food processor or bowl, mix all the frosting ingredients until creamy. Lift cooled bread with parchment paper from pan to a flat surface to frost.

Toppings

  • Sprinkle with remaining tsp of cinnamon and brown sugar. Top with pumpkin seeds.
  • Slice and enjoy with your favorite hot tea or coffee!
